- 1 lb beef stew meat, cubed
- 1 cup barley
- 4 cups beef broth
- 2 carrots, diced
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 1 cup green peas (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Brown the beef stew meat on all sides.
- Add the onion and garlic, cooking until soft.
- Stir in the carrots, potatoes, barley, thyme, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Reduce heat, cover, and simmer for about 90 minutes, or until the beef is tender.
- Add green peas in the last 10 minutes of cooking.
- Serve hot and enjoy your cozy meal.

Sear the meat well for better flavor. Let it simmer gently to ensure the beef is tender.
