Ingredients

  • 1 lb beef stew meat, cubed
  • 1 cup barley
  • 4 cups beef broth
  • 2 carrots, diced
  • 2 potatoes, diced

  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup green peas (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Brown the beef stew meat on all sides.
  2. Add the onion and garlic, cooking until soft.
  3. Stir in the carrots, potatoes, barley, thyme, salt, and pepper.
  4. Pour in beef broth and bring to a boil.
  5. Reduce heat, cover, and simmer for about 90 minutes, or until the beef is tender.
  6. Add green peas in the last 10 minutes of cooking.
  7. Serve hot and enjoy your cozy meal.
