- 2 medium beets
- 4 oz goat cheese
- 4 cups mixed greens

Instructions
- Preheat the oven to 400°F (200°C).
- Wrap beets in aluminum foil and roast in the oven for 45-60 minutes, or until tender.
- Let beets cool, then peel and slice.
- In a bowl, whisk together balsamic vinegar, olive oil, salt, and pepper.
- In a large salad bowl, combine mixed greens, sliced beets, walnuts, and goat cheese.
- Drizzle with the balsamic dressing and toss gently to combine. Serve immediately.

To enhance sweetness, scrub beets clean before roasting. Consider roasting walnuts lightly to intensify their flavor.
