- 4 salmon fillets
- 1 cup fresh spinach, chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup roasted red peppers, diced
- 2 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix spinach, feta, and roasted red peppers.
- Carefully cut a pocket in each salmon fillet and stuff it with the spinach mixture.
- Drizzle olive oil over the fillets and season with salt and pepper.
- Bake in the oven for 20 minutes or until the salmon is cooked through.
