Ingredients

  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup roasted red peppers, diced
  • 2 tablespoons olive oil

  • Pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix spinach, feta, and roasted red peppers.
  3. Carefully cut a pocket in each salmon fillet and stuff it with the spinach mixture.
  4. Drizzle olive oil over the fillets and season with salt and pepper.
  5. Bake in the oven for 20 minutes or until the salmon is cooked through.
