Ingredients

  • 1 pound ground chicken
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely chopped green onions
  • 1 large egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1/4 teaspoon black pepper
  • For the Firecracker Sauce:
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1–2 tablespoons sriracha (to taste)
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon grated ginger
  • Sesame seeds (for garnish)
  • Chopped green onions (for garnish)
  • Red pepper flakes (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, panko breadcrumbs, chopped green onions, beaten egg, minced garlic, grated ginger, soy sauce, sesame oil, red pepper flakes, and black pepper. Mix gently without overmixing.
  3. Wet your hands with cold water and form 1-inch meatballs, placing them on a lined baking sheet.
  4. Bake meatballs for 15-20 minutes until cooked through and lightly browned (internal temperature of 165°F/74°C).
  5. While baking, prepare the Firecracker sauce in a saucepan by whisking together honey, soy sauce, rice vinegar, sriracha, sesame oil, and minced garlic and ginger. In a separate bowl, mix cornstarch with water and add to the saucepan.
  6. Simmer sauce over medium heat, stirring constantly until thickened (about 2-3 minutes).
  7. Once meatballs are done, toss them in the sauce until evenly coated, simmering for another 2-3 minutes.
  8. Remove from heat and garnish with sesame seeds, chopped green onions, and extra red pepper flakes before serving.

Notes

Don’t overmix the meatball mixture to ensure tenderness. Keep your hands moist when shaping meatballs to prevent sticking.
