Ingredients

  • 4 cups all-purpose flour
  • 10 tablespoons cold unsalted butter, cubed
  • 2 cups feta cheese, crumbled
  • 2 large eggs
  • 6 1/2 tablespoons sour cream
  • 1 egg, beaten (for brushing)
  • Poppy seeds, for topping
  • Caraway seeds, for topping
  • Sesame seeds, for topping
  • Coarse salt, for topping

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix flour and cubed butter until it resembles coarse crumbs. Stir in feta cheese.
  3. In a separate bowl, beat eggs with sour cream, then add to flour mixture. Mix just until a dough forms.
  4. On a floured surface, roll dough into a rectangle about 1/4 inch thick. Chill for 15–30 minutes if dough is too soft.
  5. Cut into strips using a knife or pizza cutter. Transfer to prepared baking sheet.
  6. Brush each strip with beaten egg and sprinkle with poppy seeds, sesame, caraway, or coarse salt as desired.
  7. Bake for 18–22 minutes until golden brown and crisp. Cool slightly before serving.

Notes

Keep the butter cold and work quickly. Rotate the baking sheet halfway through if your oven has hot spots.
