Ingredients
2 medium black beauty zucchinis (sliced)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon sea salt
½ teaspoon black pepper
1 tablespoon fresh lemon juice
Optional: Parmesan, chili flakes, chopped herbs
Instructions
1. Wash and slice the zucchini into uniform rounds.
2. Heat olive oil in a cast iron skillet over medium-high heat.
3. Add garlic and sauté for 30 seconds until fragrant.
4. Add zucchini slices, season with salt and pepper.
5. Cook for 2–3 minutes per side until golden but still tender.
6. Remove from heat and drizzle with lemon juice.
7. Add optional toppings if desired and serve warm.
Notes
Do not overcrowd the pan or the zucchini will steam instead of sear.
Perfect as a side or tossed into pasta or grain bowls.
