Ingredients

  • 1 ½ cups crushed chocolate cookies
  • 4 tablespoons melted butter
  • 16 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1 cup cherry pie filling
  • Chocolate shavings (for garnish)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the crushed chocolate cookies and melted butter. Press firmly into the bottom of a mini cheesecake pan.
  3. Beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth.
  4. Gently fold in the whipped cream until fully incorporated.
  5. Spoon the mixture over the crusts and smooth the tops. Bake for 15 to 20 minutes until set, then cool at room temperature.
  6. Top with cherry pie filling and chocolate shavings. Chill for at least an hour before serving.

Notes

For best results, ensure cream cheese is at room temperature and be gentle when folding in whipped cream.
