  • 1 cup diced bell peppers
  • 1 cup diced potatoes (or hash browns)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Tortillas (for serving)
  • Salsa (optional, for serving)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the eggs and milk until well combined.
  3. Add in the shredded cheese, cooked sausage, diced bell peppers, potatoes, salt, pepper, paprika, and garlic powder. Mix until evenly combined.
  4. Pour the mixture into the prepared baking dish.
  5. Bake for 25-30 minutes, or until the eggs are set and the top is lightly golden.
  6. Let it cool slightly before slicing.
  7. Serve with tortillas and salsa if desired.
