Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup packed brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 medium tart apples, peeled and thinly sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup caramel sauce

Instructions

  1. Preheat oven to 325°F (163°C) and line a 9×9-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and salt; add melted butter.
  3. Reserve 1/3 of the crumb mixture for topping and press the rest into the bottom of the pan.
  4. Bake crust for 10 minutes, then let cool.
  5. Toss sliced apples with lemon juice, sugar, and cinnamon.
  6. Spread the apple mixture over the cooled crust.
  7. In a separate bowl, beat cream cheese until smooth, then mix in sugar, eggs, and vanilla.
  8. Pour cheesecake batter over apple layer and spread evenly.
  9. Sprinkle reserved crumb topping over cheesecake layer.
  10. Bake for 45-50 minutes until set and golden brown on top.
  11. Cool completely at room temperature, then refrigerate for at least 3 hours.
  12. Slice and drizzle with caramel sauce before serving.

Notes

Ensure adequate chilling time for the best texture. Can be made gluten-free with appropriate graham cracker substitutes.
