- 1 1/2 cups graham cracker crumbs
- 1/2 cup packed brown sugar

- 1/2 cup unsalted butter, melted
- 2 medium tart apples, peeled and thinly sliced

- 2 tablespoons granulated sugar

- 16 oz cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup caramel sauce
Instructions
- Preheat oven to 325°F (163°C) and line a 9×9-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and salt; add melted butter.
- Reserve 1/3 of the crumb mixture for topping and press the rest into the bottom of the pan.
- Bake crust for 10 minutes, then let cool.
- Toss sliced apples with lemon juice, sugar, and cinnamon.
- Spread the apple mixture over the cooled crust.
- In a separate bowl, beat cream cheese until smooth, then mix in sugar, eggs, and vanilla.
- Pour cheesecake batter over apple layer and spread evenly.
- Sprinkle reserved crumb topping over cheesecake layer.
- Bake for 45-50 minutes until set and golden brown on top.
- Cool completely at room temperature, then refrigerate for at least 3 hours.
- Slice and drizzle with caramel sauce before serving.
Notes
Ensure adequate chilling time for the best texture. Can be made gluten-free with appropriate graham cracker substitutes.
