Ingredients
1 large English cucumber
200 g smoked salmon slices
3 oz cream cheese or herbed cheese
1 tbsp fresh dill, chopped
1 tbsp fresh chives, chopped
1 tsp lemon zest
Cracked black pepper to taste
Toothpicks or mini skewers
Instructions
1. Wash and dry cucumber, then slice long ribbons with a peeler or mandoline.
2. In a bowl, mix cream cheese, dill, chives, lemon zest, and pepper.
3. Lay a cucumber ribbon flat, spread cheese, add a small salmon slice, then roll.
4. Secure with a toothpick or skewer.
5. Arrange on a platter, cover, and chill 20–30 minutes before serving.
Notes
Use cold, firm cucumber for easy rolling.
Pat salmon dry to avoid excess moisture.
