- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste

- 4 cups mashed potatoes (store-bought or homemade)
- 1 cup corn kernels (canned or frozen)
- 1 cup shredded cheddar cheese
- 1 cup prepared gravy (chicken or brown)
- Chopped fresh parsley for garnish (optional)
Instructions
- In a medium bowl, mix the chicken pieces with garlic powder, onion powder, paprika, salt, and pepper until well-coated.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 7-9 minutes. Remove chicken from the skillet and set aside.
- In a medium saucepan, heat the gravy according to package instructions or homemade recipe. Keep warm.
- If using frozen corn, cook according to package instructions. If using canned corn, drain and heat in a small saucepan until warm.
- Prepare or reheat mashed potatoes until smooth and hot.
- To assemble the bowls, start by adding a generous scoop of mashed potatoes to the bottom of each serving bowl.
- Top each portion of mashed potatoes with some cooked corn, followed by a portion of chicken.
- Drizzle warm gravy over the chicken and potatoes, then sprinkle shredded cheese on top.
- Garnish with fresh parsley if desired and serve immediately.
Notes
For a lighter version, use low-fat milk and olive oil in mashed potatoes. For gluten-free options, verify that the gravy and mashed potatoes are suitable.
