Ingredients

  • Chicken tenders or breasts, sliced
  • Buttermilk
  • All-purpose flour
  • Cornstarch (optional)
  • Eggs
  • Salt
  • Pepper
  • Cooking oil (vegetable or canola)
  • Honey
  • Chipotle chili powder or canned chipotles in adobo
  • Ketchup
  • A splash of vinegar

Instructions

  1. Marinate the chicken: Soak the strips in buttermilk for about 30 minutes.
  2. Dredge and coat: Dip in flour, then egg, then flour again for extra crispiness.
  3. Heat your oil: Get it hot but not smoking in a deep pan or fryer.
  4. Fry till golden: Drop the chicken pieces in carefully and cook for about 5 minutes per side until golden.
  5. Sauce it up: Mix honey, chipotle, ketchup, and vinegar in a pan and warm until bubbly, then dunk the fried chicken in the sauce.

Notes

You can bake the chicken at 425°F for a healthier option, just spray with oil for best results. Store-bought honey chipotle sauce can be used in a pinch.
