Ingredients
Scale
- 2 large sweet potatoes
- 2 tablespoons unsalted butter
- 1-2 tablespoons chipotle in adobo sauce (to taste)
- 1/4 cup milk (or cream)
- Salt and pepper to taste
Instructions
- Peel and cube the sweet potatoes.
- Boil in a pot of salted water until tender, about 15-20 minutes.
- Drain the sweet potatoes and return to the pot.
- Add butter, chipotle in adobo, milk, salt, and pepper.
- Mash until smooth and creamy.
- Adjust seasoning, if necessary.
- Serve warm.
Notes
Warm the milk before adding to prevent the mash from becoming gluey.
