Creamy and smoky mashed sweet potatoes with chipotle in adobo for a warm flavor contrast.

Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons unsalted butter
  • 1-2 tablespoons chipotle in adobo sauce (to taste)
  • 1/4 cup milk (or cream)
  • Salt and pepper to taste

Instructions

  1. Peel and cube the sweet potatoes.
  2. Boil in a pot of salted water until tender, about 15-20 minutes.
  3. Drain the sweet potatoes and return to the pot.
  4. Add butter, chipotle in adobo, milk, salt, and pepper.
  5. Mash until smooth and creamy.
  6. Adjust seasoning, if necessary.
  7. Serve warm.

Notes

Warm the milk before adding to prevent the mash from becoming gluey.
