- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup buttermilk
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- ½ tsp peppermint extract
- ½ cup chocolate chips
- Crushed peppermint candies (optional) for topping
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix the buttermilk, vegetable oil, eggs, vanilla extract, and peppermint extract until well combined.
- Combine the wet and dry ingredients, stirring until just combined. Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and sprinkle crushed peppermint candies on top if desired.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Enjoy your festive bread!
Notes
For a different flavor, try substituting peppermint extract with almond extract. Store leftovers in an airtight container for up to 4 days.
