Ingredients
1 ½ cups grated zucchini
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 ¼ cups granulated sugar
½ cup brown sugar
½ cup melted unsalted butter
2 large eggs
1 tsp vanilla extract
½ tsp baking soda
¼ tsp baking powder
½ tsp salt
1 cup semi-sweet chocolate chips
Optional: ½ cup chopped walnuts or pecans
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan.
2. Grate zucchini and gently squeeze out excess moisture.
3. Whisk flour, cocoa powder, baking soda, baking powder, and salt.
4. Combine melted butter, sugars, eggs, and vanilla.
5. Fold in shredded zucchini.
6. Add dry ingredients to wet and stir until just combined.
7. Fold in chocolate chips (and nuts if using).
8. Spread batter in pan, sprinkle extra chocolate chips on top.
9. Bake 30–35 minutes until toothpick comes out with moist crumbs.
10. Cool completely, slice, and enjoy.
Notes
Slightly underbake for extra fudgy brownies.
Use fresh, firm zucchini for best results.
