A bright cranberry ribbon meets a satin white chocolate cloud, atop a crunchy graham cracker crust and creamy cheesecake filling.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup cranberry sauce or cranberry jam
  • 1 cup heavy cream
  • 1/2 cup white chocolate, melted
  • 1 tablespoon powdered sugar

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until well combined. Press mixture into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each addition.
  4. Pour the cheesecake batter into the crust. Bake for 45-50 minutes, or until center is set. Let cool, then refrigerate for at least 4 hours.
  5. Once chilled, spread cranberry jam evenly on top of the cheesecake.
  6. In a separate bowl, whisk heavy cream and powdered sugar until soft peaks form. Gently fold in melted white chocolate.
  7. Spread the mousse over the cranberry layer. Chill for an additional hour before serving.

Notes

For best results, chill the cheesecake overnight. Press the crust firmly to prevent crumbling.
