Christmas Pinwheel Cookies are a festive treat loved by all. Easy to make and delightful to share, these cookies are perfect for decorating your holiday cookie platters.

Ingredients

  • 3/4 cup salted butter (softened to room temperature)
  • 3/4 cup granulated sugar
  • 3/4 cup powdered sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Red & green gel food coloring
  • Holiday colored nonpareils
  • Optional: 1/2-1 teaspoon of additional flavoring extracts or lemon zest

Instructions

  1. In a large mixing bowl, combine the softened butter, granulated sugar, and powdered sugar. Beat with a mixer until light and fluffy.
  2. Crack in the eggs and add the vanilla extract (and any optional flavorings). Scrape the bowl to combine everything well.
  3. Gradually add the flour, baking powder, and salt, mixing until just combined.
  4. Split the dough into three equal balls. Add red gel food coloring to one ball, and green to another, mixing well.
  5. Flatten each ball into a disc, wrap in plastic, and chill for 20 minutes in the freezer or 1 hour in the fridge.
  6. Roll each disc into a rectangle on parchment paper, layering them to form red and green outer layers with white in the middle.
  7. Roll the dough into a tight log using parchment, wrap it in plastic, and chill for 1-2 hours.
  8. Once firm, roll the log in holiday nonpareils, pressing gently to stick.
  9. Preheat oven to 350°F (175°C). Unwrap and slice the dough log into 1/4-inch cookies, space them on a lined baking sheet, and bake for 10-12 minutes.
  10. Cool completely on a wire rack.

Notes

Chill times are key to maintain cookie shape. Experiment with flavors by using different extracts.
