Instructions
- In a medium saucepan, combine water, butter, salt, and cinnamon. Bring to a boil.
- Remove from heat and stir in the flour. Mix until smooth.
- Let cool for 3-5 minutes, then mix in the egg until glossy.
- Heat oil in a frying pan to 350°F (175°C).
- Pipe small rounds of dough into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Drain on paper towels and roll in cinnamon-sugar while still warm.
- For the filling, beat cream cheese, powdered sugar, and vanilla until smooth.
- Fill each fried round with the cheesecake mixture.
- Serve warm or at room temperature for the best experience.

Use room-temperature cream cheese for a smooth filling. Fry in small batches to maintain oil temperature.
