Delicious cinnamon roll bars with a crispy top and a silky, tender interior, finished with a sweet glaze.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Creamy glaze (optional) – powdered sugar with water or plant-based milk

Instructions

  1. Preheat the oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and brown sugar together.
  3. Add the eggs and vanilla extract, mixing until fully combined.
  4. In a separate bowl, combine the flour, cinnamon, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Pour the batter into the prepared baking sheet and spread it evenly with a spatula.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bars cool completely.
  9. In a small bowl, mix powdered sugar with a little water or plant-based milk to create a smooth glaze.
  10. Optionally, add a sprinkle of cinnamon to the glaze.
  11. Cut the cooled bars into even pieces and drizzle generously with the glaze.

Notes

Room temperature ingredients blend more easily for a consistent batter. Allow bars to cool completely before glazing.
