- 2 cups all-purpose flour

- 1 cup unsweetened shredded coconut
- 1/2 cup unsalted butter, softened
- 1 cup coconut milk
- 3 large eggs

- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Cream together the softened butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each, then stir in vanilla extract and coconut milk.
- In a separate bowl, whisk together flour, baking powder, shredded coconut, and salt before folding into the wet ingredients.
- Divide batter into prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before transferring to wire racks to cool completely.
- For frosting, beat cream cheese, powdered sugar, heavy cream, and vanilla until smooth.
- Frost the cooled cake layers, adding coconut flakes on the sides for decoration.
- Serve and enjoy!
Notes
For a glossy frosting, fold 1 tablespoon of extra coconut milk into the cream cheese frosting before using.
