  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each, then stir in vanilla extract and coconut milk.
  4. In a separate bowl, whisk together flour, baking powder, shredded coconut, and salt before folding into the wet ingredients.
  5. Divide batter into prepared pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes before transferring to wire racks to cool completely.
  8. For frosting, beat cream cheese, powdered sugar, heavy cream, and vanilla until smooth.
  9. Frost the cooled cake layers, adding coconut flakes on the sides for decoration.

For a glossy frosting, fold 1 tablespoon of extra coconut milk into the cream cheese frosting before using.
