Instructions
- In a large bowl, combine shredded coconut, rolled oats, almond butter, honey or maple syrup, lime juice, lime zest, and salt. Stir until well mixed.
- Once the mixture is combined, use your hands to form small balls, about 1 inch in diameter.
- Place the bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
Notes
For a vegan option, substitute honey with maple syrup. Ensure almond butter is well mixed to avoid binding issues.
