Ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 2 tablespoons lime juice

Instructions

  1. In a large bowl, combine shredded coconut, rolled oats, almond butter, honey or maple syrup, lime juice, lime zest, and salt. Stir until well mixed.
  2. Once the mixture is combined, use your hands to form small balls, about 1 inch in diameter.
  3. Place the bites on a baking sheet lined with parchment paper.
  4. Refrigerate for at least 30 minutes to firm up.
  5. Store in an airtight container in the refrigerator for up to a week.

Notes

For a vegan option, substitute honey with maple syrup. Ensure almond butter is well mixed to avoid binding issues.
