1 ½ cups coconut water (unsweetened, chilled)

¾ cup pineapple juice (fresh or bottled, not from concentrate)

½ lime, juiced (optional)

Fresh mint leaves (optional)

Ice cubes

Instructions

1. Fill a tall glass with ice cubes.

2. Pour in the coconut water, about two-thirds full.

3. Add the pineapple juice and stir gently.

4. Squeeze in fresh lime juice if using.

5. Top with mint leaves and serve immediately.

Notes

Use fresh pineapple juice when possible for the best flavor.

To serve a crowd, mix in a pitcher and keep lime and mint on the side.

For a sparkling version, replace half the coconut water with sparkling water.

Best enjoyed fresh, but can be refrigerated up to 24 hours.
