Delicious cookies with a warm spice and a silky, cinnamon-tinged crumb, made with Biscoff cookie butter and chocolate chips.

Ingredients

  • 1 cup Biscoff Cookie Butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup crushed Lotus Biscoff Cookies

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the Biscoff Cookie Butter, brown sugar, and granulated sugar until smooth.
  3. Add in the softened butter and mix until well combined.
  4. Beat in the eggs and vanilla extract until fully incorporated.
  5. In another bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the chocolate chips and crushed Lotus Biscoff Cookies.
  8. Drop spoonfuls of dough onto a lined baking sheet, spacing them apart.
  9. Bake for 10-12 minutes or until the edges are golden.
  10. Let them cool on the sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Use room-temperature butter and avoid overmixing for the best texture. Chill dough briefly if you prefer less spread.
