  • 1 onion, diced
  • 2 cloves garlic, minced

  • 1 cup celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or chicken broth
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup corn (frozen or canned)
  • 1 cup green beans (frozen or canned)
  • 1 cup potatoes, diced
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat, draining any excess fat.
  2. Add the diced onion and minced garlic, stirring until they turn translucent and fragrant.
  3. Toss in the diced carrots and celery, cooking until they are slightly tender.
  4. Stir in diced tomatoes, broth, Italian seasoning, salt, and pepper. Allow the mixture to reach a boil.
  5. Reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld.
  6. Stir in the corn, green beans, and diced potatoes, simmering until the vegetables are tender, about 10-15 minutes.
  7. If using, add the heavy cream and stir until heated through.
  8. Ladle into bowls and enjoy!

For a healthier version, substitute heavy cream with plant-based milk and opt for lean meat.
