- 4 cups beef or chicken broth

- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup corn (frozen or canned)
- 1 cup green beans (frozen or canned)
- 1 cup potatoes, diced
- 1/2 cup heavy cream (optional)
Instructions
- In a large pot, brown the ground beef or turkey over medium heat, draining any excess fat.
- Add the diced onion and minced garlic, stirring until they turn translucent and fragrant.
- Toss in the diced carrots and celery, cooking until they are slightly tender.
- Stir in diced tomatoes, broth, Italian seasoning, salt, and pepper. Allow the mixture to reach a boil.
- Reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld.
- Stir in the corn, green beans, and diced potatoes, simmering until the vegetables are tender, about 10-15 minutes.
- If using, add the heavy cream and stir until heated through.
- Ladle into bowls and enjoy!
Notes
For a healthier version, substitute heavy cream with plant-based milk and opt for lean meat.
