- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can diced tomatoes
- 1 cup corn (fresh or canned)
- 1 cup carrots, diced
- 1 bell pepper, chopped
- 1 tablespoon Worcestershire sauce
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
- Stir in the chopped onion and minced garlic and cook until the onion becomes translucent, about 4-5 minutes.
- Pour in the beef broth, diced tomatoes, corn, diced carrots, and chopped bell pepper. Stir well to combine.
- Add the Worcestershire sauce and Italian seasoning, and sprinkle with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-30 minutes.
- Ladle the soup into bowls and serve hot.
Notes
For a healthier option, consider using lean ground beef or turkey. This soup can be made gluten-free by using appropriate Worcestershire sauce.
