Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 cup corn (fresh or canned)
  • 1 cup carrots, diced
  • 1 bell pepper, chopped
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat medium heat. Add the ground beef and cook until browned, about 5-7 minutes.
  2. Stir in the chopped onion and minced garlic and cook until the onion becomes translucent, about 4-5 minutes.
  3. Pour in the beef broth, diced tomatoes, corn, diced carrots, and chopped bell pepper. Stir well to combine.
  4. Add the Worcestershire sauce and Italian seasoning, and sprinkle with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-30 minutes.
  6. Ladle the soup into bowls and serve hot.

Notes

For a healthier option, consider using lean ground beef or turkey. This soup can be made gluten-free by using appropriate Worcestershire sauce.
