- 1 3/4 cups all-purpose flour

- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1/4 cup pumpkin seeds (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, ginger, and salt.
- In a large bowl, beat the sugar and vegetable oil together until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the pumpkin puree, water, and vanilla extract until fully combined.
- Gradually add the dry mixture into the wet ingredients, mixing gently until just combined.
- Pour the batter into the prepared loaf pan and smooth out the top.
- If desired, sprinkle pumpkin seeds on top for an added crunch.
- Bake for 60-70 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
- Once baked, let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Slice, serve, and enjoy the deliciousness!
Notes
Check your bread halfway through baking; if it browns too quickly, cover loosely with aluminum foil.
