  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon

  • 1/4 teaspoon ground ginger

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/4 cup pumpkin seeds (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, ginger, and salt.
  3. In a large bowl, beat the sugar and vegetable oil together until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the pumpkin puree, water, and vanilla extract until fully combined.
  6. Gradually add the dry mixture into the wet ingredients, mixing gently until just combined.
  7. Pour the batter into the prepared loaf pan and smooth out the top.
  8. If desired, sprinkle pumpkin seeds on top for an added crunch.
  9. Bake for 60-70 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
  10. Once baked, let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
