- 1 small head of green cabbage, shredded
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup shredded carrots
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon sugar
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded cabbage, diced peppers, and shredded carrots.
- In a separate bowl, mix together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, smoked paprika, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss to combine.
- Let the coleslaw sit for at least 30 minutes in the refrigerator to let the flavors meld.
- Serve chilled as a side dish at BBQs or potlucks.
Notes
For added crunch, avoid adding the dressing until just before serving. You can substitute ingredients based on preferences.
