Ingredients

  • 1 small head of green cabbage, shredded
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup shredded carrots
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sugar
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine shredded cabbage, diced peppers, and shredded carrots.
  2. In a separate bowl, mix together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, smoked paprika, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss to combine.
  4. Let the coleslaw sit for at least 30 minutes in the refrigerator to let the flavors meld.
  5. Serve chilled as a side dish at BBQs or potlucks.

Notes

For added crunch, avoid adding the dressing until just before serving. You can substitute ingredients based on preferences.
