- 1 lb Spicy Italian Sausage (use mild for less heat)
- 1 medium Onion, diced
- 3 cloves Garlic, minced
- 4 cups Chicken Broth (or vegetable broth for vegetarian)
- 1 can (14.5 oz) Crushed Tomatoes (try fire-roasted for extra flavor)
- 1/2 cup Heavy Cream
- 1 package (9 oz) Tortellini (any variety you like)
- 2 cups Fresh Spinach (adds freshness)
Instructions
- Sauté onion, garlic, and sausage in a large pot until cooked through.
- Add chicken broth and bring to a simmer.
- Stir in crushed tomatoes, heavy cream, and tortellini. Cook until tortellini floats to the top.
- Stir in fresh spinach just before serving.
Notes
For extra heat, add a pinch of crushed red pepper. Stir continuously after adding cream to prevent scorching. Store leftovers in the fridge for up to 3 days.
