Cozy and fluffy pumpkin pancakes, perfect for a chilly morning breakfast.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter

Instructions

  1. In a bowl, mix the flour, brown sugar, baking powder, salt, cinnamon, and nutmeg.
  2. In another bowl, combine the milk, pumpkin puree, egg, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Heat a griddle over medium heat and grease lightly.
  5. Pour 1/4 cup of batter for each pancake and cook until bubbles form; flip and cook until golden brown.
  6. Serve warm with maple syrup.

Notes

Feel free to add chocolate chips or nuts for extra flavor!
