- 1 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup milk
- 1/2 cup pumpkin puree
- 1 large egg
- 2 tablespoons melted butter
Instructions
- In a bowl, mix the flour, brown sugar, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, combine the milk, pumpkin puree, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Heat a griddle over medium heat and grease lightly.
- Pour 1/4 cup of batter for each pancake and cook until bubbles form; flip and cook until golden brown.
- Serve warm with maple syrup.
Notes
Feel free to add chocolate chips or nuts for extra flavor!
