  • 1 lb steak (sirloin or ribeye)

  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • parsley, chopped (optional)
  • red pepper flakes (optional)
  • cracked black pepper (optional garnish)

Instructions

  1. Season the steak generously with salt, black pepper, garlic powder, and smoked paprika, pressing the spices into the meat.
  2. Bring a large pot of salted water to a boil and cook the tortellini until just al dente; reserve one cup of pasta water before draining.
  3. Heat a large skillet over high heat and add 2 tbsp olive oil; sear the steak for 2–3 minutes per side for medium-rare.
  4. Remove the steak to a cutting board and let it rest for at least five minutes; slice thinly against the grain.
  5. Reduce heat to medium, add 4 tbsp butter to the skillet, then stir in the minced garlic and a pinch of smoked paprika; cook until fragrant.
  6. Pour in 1 cup heavy cream and 3/4 cup whole milk; bring to a gentle simmer, stirring to integrate browned bits.
  7. Whisk in 1 1/4 cups parmesan until the sauce thickens; use reserved pasta water to adjust the consistency.
  8. Toss the drained tortellini into the cream sauce until coated, then fold in the sliced steak.
  9. Taste and adjust seasoning with salt, cracked black pepper, and red pepper flakes if desired; finish with chopped parsley.
  10. Serve immediately, plating tortellini first and arranging steak slices on top.

Notes

For lighter variation, swap heavy cream for a lighter cream alternative and reduce parmesan. Store sauce and pasta separately if reheating.
