Ingredients

  • 1 lb beef stew meat, cut into cubes
  • 2 apples, peeled and diced

  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary

Instructions

  1. In a large pot, heat olive oil over medium heat. Brown the beef cubes on all sides and season with salt, pepper, thyme, and rosemary.
  2. Add the diced onion, carrots, celery, and garlic. Cook until the vegetables are softened.
  3. Stir in the diced apples and cranberries, then pour in the beef broth. Bring to a boil.
  4. Reduce heat, cover, and simmer for about 90 to 120 minutes until the beef is tender.
