- 1 lb beef stew meat, cut into cubes
- 2 apples, peeled and diced
- 1 cup cranberries (fresh or frozen)
- 4 cups beef broth
- 1 onion, diced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Brown the beef cubes on all sides and season with salt, pepper, thyme, and rosemary.
- Add the diced onion, carrots, celery, and garlic. Cook until the vegetables are softened.
- Stir in the diced apples and cranberries, then pour in the beef broth. Bring to a boil.
- Reduce heat, cover, and simmer for about 90 to 120 minutes until the beef is tender.
- Taste and adjust seasoning if necessary. Serve warm.

Searing the meat enhances the flavor. Customize the herbs and spices to suit your taste. Use fresh cranberries and seasonal apples for the best flavor.
