Ingredients

  • 2 lbs beef stew meat
  • 2 cups diced apples
  • 1 cup fresh or frozen cranberries
  • 4 cups beef broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Brown the beef stew meat on all sides.
  2. Add chopped onion and garlic, cooking until softened.
  3. Stir in diced apples, cranberries, carrots, and potatoes.
  4. Pour in beef broth and add thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and let simmer for 1.5 to 2 hours, or until beef is tender.
  6. Serve hot.

Notes

For best results, use fresh ingredients and let the stew simmer slowly. Adjust seasonings to taste.
