- 2 lbs beef stew meat
- 2 cups diced apples
- 1 cup fresh or frozen cranberries
- 4 cups beef broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 2 cloves garlic, minced

- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Brown the beef stew meat on all sides.
- Add chopped onion and garlic, cooking until softened.
- Stir in diced apples, cranberries, carrots, and potatoes.
- Pour in beef broth and add thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low and let simmer for 1.5 to 2 hours, or until beef is tender.
- Serve hot.
Notes
For best results, use fresh ingredients and let the stew simmer slowly. Adjust seasonings to taste.
