- 1 pound beef stew meat
- 2 cups apples, diced
- 1 cup cranberries (fresh or frozen)
- 4 cups beef broth
- 2 carrots, sliced
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the beef stew meat and brown on all sides.
- Add the onion and garlic, sauté until the onion is translucent.
- Stir in the carrots, apples, and cranberries.
- Pour in the beef broth and add thyme, salt, and pepper.
- Bring to a boil, then reduce the heat and let simmer for about 90 to 120 minutes, until the beef is tender.
- Serve warm.
