Ingredients

  • 1 pie crust (store-bought or homemade)
  • 2 cups fresh cranberries
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1/2 cup orange juice
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place the pie crust in a pie dish and bake for 10 minutes until lightly golden.
  3. In a mixing bowl, combine the eggs, sugar, heavy cream, orange juice, orange zest, vanilla extract, and salt. Whisk until smooth.
  4. Add the fresh cranberries to the baked pie crust.
  5. Pour the custard mixture over the cranberries.
  6. Bake for 30-35 minutes, or until the custard is set and lightly golden.
  7. Allow to cool before serving. Enjoy!

Notes

For a lighter texture, replace half the heavy cream with whole milk or use coconut cream for a dairy-free option. Make ahead by preparing the custard and pie shell separately.
