Ingredients

  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup crushed pistachios
  • 1/2 cup dried cranberries, chopped
  • 1 cup white chocolate chips

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  2. Fold in the crushed pistachios and chopped cranberries until evenly distributed.
  3. Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
  4. Freeze the balls for about 30 minutes to firm them up.
  5. Melt the white chocolate chips in a microwave-safe bowl or double boiler, stirring until smooth.
  6. Dip each cheesecake ball into the melted white chocolate, allowing excess to drip off.
  7. Return the chocolate-coated balls to the baking sheet and sprinkle with additional crushed pistachios if desired.
  8. Refrigerate until the chocolate sets completely. Serve cold and enjoy!
