- 1 cup white chocolate chips
Instructions
- In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- Fold in the crushed pistachios and chopped cranberries until evenly distributed.
- Roll the mixture into small balls and place them on a baking sheet lined with parchment paper.
- Freeze the balls for about 30 minutes to firm them up.
- Melt the white chocolate chips in a microwave-safe bowl or double boiler, stirring until smooth.
- Dip each cheesecake ball into the melted white chocolate, allowing excess to drip off.
- Return the chocolate-coated balls to the baking sheet and sprinkle with additional crushed pistachios if desired.
- Refrigerate until the chocolate sets completely. Serve cold and enjoy!
