Cranberry & Spinach Stuffed Chicken Breasts with Brie

Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 oz Brie cheese, sliced
  • 1/4 cup cranberry sauce
  • 1 cup fresh spinach (optional)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place each chicken breast on a cutting board and slice horizontally to create a pocket.
  3. Fill each pocket with Brie cheese, a dollop of cranberry sauce, and fresh spinach if desired.
  4. Season the outside of each stuffed breast with salt and pepper.
  5. In a skillet, heat olive oil over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for a few minutes before slicing and serving.

Notes

Avoid overstuffing the chicken to prevent leaks. Use a meat thermometer for perfect doneness.
