- 4 boneless, skinless chicken breasts
- 4 oz Brie cheese, sliced
- 1/4 cup cranberry sauce
- 1 cup fresh spinach (optional)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Place each chicken breast on a cutting board and slice horizontally to create a pocket.
- Fill each pocket with Brie cheese, a dollop of cranberry sauce, and fresh spinach if desired.
- Season the outside of each stuffed breast with salt and pepper.
- In a skillet, heat olive oil over medium heat and sear the chicken for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for a few minutes before slicing and serving.
Notes
Avoid overstuffing the chicken to prevent leaks. Use a meat thermometer for perfect doneness.
