- 1 pound ground beef
- 1 head cauliflower, chopped into florets

Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onions and garlic; sauté until translucent.
- Add ground beef and cook until browned.
- Stir in cauliflower florets and beef broth; bring to a boil.
- Reduce heat and let simmer for about 20 minutes until cauliflower is tender.
- Use an immersion blender to blend the soup to a creamy consistency.
- Stir in heavy cream, season with salt and pepper, and heat through.
- Serve warm.
Notes
Can substitute ground beef with turkey or a plant-based alternative. For a lighter flavor, consider using chicken broth instead of beef broth.
