- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the broccoli florets and sauté until tender.
- Add the orzo and chicken broth, bringing to a boil.
- Reduce heat and simmer until orzo is cooked, about 8-10 minutes.
- Stir in the shredded chicken, heavy cream, and cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve warm.
Notes
For added fiber, stir in a handful of chopped spinach at the end. Pair with a simple green salad or oven-roasted carrots.
