Ingredients

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the broccoli florets and sauté until tender.
  3. Add the orzo and chicken broth, bringing to a boil.
  4. Reduce heat and simmer until orzo is cooked, about 8-10 minutes.
  5. Stir in the shredded chicken, heavy cream, and cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve warm.

Notes

For added fiber, stir in a handful of chopped spinach at the end. Pair with a simple green salad or oven-roasted carrots.
