- 2 chicken breasts, cooked and shredded (about 2 cups)
- 8 oz cream cheese, softened

- 2 cups fresh spinach, roughly chopped
- 1 cup chicken broth (plus a reserved 1/4 cup for a special tweak)
- 1 cup mixed vegetables (optional — frozen peas, carrots, or corn work well)
- Salt and pepper to taste
- Garlic powder (optional)
- Olive oil or cooking spray to grease the baking dish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cream cheese, chicken broth, garlic powder (if using), salt, and pepper until smooth. For a brighter flavor, add 1/4 tsp lemon zest and 1/4 cup warmed chicken broth.
- Stir in the cooked and shredded chicken and fresh spinach until well combined, folding gently to wilt the spinach slightly.
- Pour the mixture into a greased baking dish and top with shredded mozzarella cheese.
- Add mixed vegetables on top, if using, distributing them evenly.
- Bake for 25–30 minutes or until the cheese is melted and bubbly.
- Serve warm and enjoy your comforting meal.
