- 8 oz whole wheat pasta
- 1 lb lean chicken breast, diced
- 1 cup Greek yogurt
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the whole wheat pasta according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through.
- Add minced garlic to the skillet and cook for 1-2 minutes until fragrant.
- Lower the heat and stir in the Greek yogurt and Parmesan cheese until combined.
- Add the cooked pasta to the skillet and toss to coat everything evenly.
- Serve warm, garnished with fresh parsley.
Notes
Keep the heat low when adding yogurt to prevent separation. Taste and adjust seasoning carefully as Parmesan adds salt.
