Ingredients

  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  2. Pour in the chicken or vegetable broth and bring to a simmer.
  3. Stir in the heavy cream and Parmesan cheese until melted and combined.
  4. Season with salt and pepper to taste.
  5. Simmer for an additional 5-10 minutes until heated through.
  6. Serve hot, garnished with fresh parsley.

Notes

Use freshly grated Parmesan for better melt. Warm the cream slightly before adding to avoid shock to temperature.
