- 1 large onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups kale, chopped
- 2 large potatoes, diced

Instructions
- In a large pot, cook Italian sausage over medium heat until browned.
- Add diced onion and minced garlic, cooking until the onion is translucent.
- Pour in chicken broth and bring to a simmer.
- Add diced potatoes and cook until tender, about 10-15 minutes.
- Stir in chopped kale and cook until wilted.
- Reduce heat and add heavy cream, stirring to combine.
- Season with salt, pepper, and red pepper flakes if desired.
- Serve hot and enjoy!
Notes
For a lighter version, use a lean sausage or plant-based alternative and reduce the heavy cream. A squeeze of lemon enhances flavor before serving.
