A comforting and delicious creamy white chicken chili that’s perfect for busy weeknights or gatherings.

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 2 cans white beans (like cannellini or great northern), drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion and garlic until soft.
  2. Add the shredded chicken, white beans, chicken broth, cumin, oregano, chili powder, salt, and pepper.
  3. Bring to a simmer and cook for 20 minutes.
  4. Stir in the heavy cream and cook for an additional 5 minutes.
  5. Serve hot, garnished with fresh cilantro.

Notes

Consider using rotisserie chicken for easier preparation. You can substitute heavy cream with coconut milk for a lighter version.
