- 1 pound chicken breast, cooked and shredded
- 2 cans white beans (like cannellini or great northern), drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the shredded chicken, white beans, chicken broth, cumin, oregano, chili powder, salt, and pepper.
- Bring to a simmer and cook for 20 minutes.
- Stir in the heavy cream and cook for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
Consider using rotisserie chicken for easier preparation. You can substitute heavy cream with coconut milk for a lighter version.
