This recipe features crispy chicken coated in a silky peanut glaze, perfectly balanced with savory depth and bright acidity.

  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 pound chicken breast, cut into bite-sized pieces
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Cooking spray
  • Chopped peanuts and green onions for garnish

Instructions

  1. In a bowl, mix peanut butter, soy sauce, honey, rice vinegar, garlic, and ginger to create a marinade.
  2. Add chicken pieces to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes.
  3. Preheat the air fryer to 400°F (200°C).
  4. Spray the air fryer basket with cooking spray.
  5. Place marinated chicken pieces in a single layer in the basket.
  6. Air fry for 12-15 minutes, shaking the basket halfway through, until chicken is crispy and cooked through.
  7. Remove from the air fryer, garnish with chopped peanuts and green onions, and serve hot.

Notes

Use smooth peanut butter for a silky glaze. Do not overcrowd the basket to ensure crispiness.
