  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt (for aioli)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel the sweet potatoes and cut them into thin fries.
  3. In a large bowl, toss the sweet potato fries with olive oil, paprika, salt, and pepper until evenly coated.
  4. Spread the fries out in a single layer on a baking sheet.
  5. Bake for 25-30 minutes, flipping halfway through, until the fries are crispy and golden.
  6. In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and salt to make the garlic aioli.

Notes

Cut the sweet potatoes uniformly to ensure even baking and avoid overcrowding the baking sheet.
