Instructions
- Preheat your oven to 425°F (220°C).
- Peel the sweet potatoes and cut them into thin fries.
- In a large bowl, toss the sweet potato fries with olive oil, paprika, salt, and pepper until evenly coated.
- Spread the fries out in a single layer on a baking sheet.
- Bake for 25-30 minutes, flipping halfway through, until the fries are crispy and golden.
- In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and salt to make the garlic aioli.
- Serve the baked sweet potato fries hot with the creamy garlic aioli for dipping.
