- 1 lb salmon fillets
- 1/2 cup flour
- 1/4 cup cornstarch
- 1 egg
- 2 tbsp water
- 1 cup breadcrumbs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup mayonnaise
- 3 tbsp sweet chili sauce
- 1 tbsp sriracha
- 2 green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the salmon fillets into bite-sized pieces.
- In a bowl, mix flour, cornstarch, salt, and pepper.
- Dip each piece of salmon in the egg mixture, then coat with the flour mixture, and finally roll in breadcrumbs.
- Place the coated salmon bites on a baking sheet and bake for 15-20 minutes or until golden brown and crispy.
- In a separate bowl, combine mayonnaise, sweet chili sauce, and sriracha to make the Bang Bang sauce.
- Toss the baked salmon bites in the sauce before serving.
- Garnish with chopped green onions and serve immediately.

For best texture, keep the sauce and bites separate until serving. Experiment with ingredient swaps for dietary preferences.
