Ingredients

  • 1 lb lean ground beef
  • 1/2 cup plain breadcrumbs
  • 3 cloves garlic, minced
  • 2 large sweet yellow onions, thinly sliced
  • 2 large eggs
  • 1 cup low-sodium beef broth
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, minced garlic, eggs, salt, and pepper. Mix until well combined.
  2. Roll the mixture into one-inch meatballs and place them on a parchment-lined baking sheet.
  3. In a skillet over medium heat, caramelize sliced onions in butter or oil for about 15-20 minutes until golden brown.
  4. In the slow cooker, mix caramelized onions with beef broth, soy sauce, dried thyme, and any remaining onion bits.
  5. Gently add the meatballs to the slow cooker, ensuring they are submerged in the sauce.
  6. Cover and cook on low for 6 hours or high for 3 hours. Check seasoning and texture before serving.

Notes

For lower saturated fat, substitute ground turkey or chicken. Use gluten-free breadcrumbs for a gluten-free option.
