Ingredients

Instructions

  1. In a food processor, combine the pitted dates and toasted coconut. Blend until a sticky dough forms.
  2. Line a baking sheet with parchment paper.
  3. Using your hands, form the mixture into small cookie shapes and place them on the prepared baking sheet.
  4. Melt the dark chocolate in a microwave or double boiler.
  5. Drizzle the melted chocolate over the formed cookies.
  6. Refrigerate for about 10-15 minutes to set the chocolate.
  7. Serve the cookies chilled or at room temperature.

Notes

Use soft dates for the smoothest dough. If your dates are dry, soak them in warm water for 10 minutes, then drain.
