- 6 apples, peeled, cored, and chopped (about 2–3 lbs depending on size)
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1/2 cup unsalted butter (1 stick)
- 4 large eggs
- 1 teaspoon ground cinnamon
Instructions
- In a saucepan, combine the chopped apples, sugar, and lemon juice. Cook over medium heat for 10–15 minutes until the apples are soft and translucent.
- Remove from heat and blend the cooked apples until smooth.
- In a bowl, whisk the eggs and gradually mix them into the apple puree, then slowly stir in melted butter.
- Return the mixture to the saucepan and cook over low heat for 8–12 minutes until thickened.
- Stir in cinnamon, let cool, then transfer to a jar and refrigerate.
Notes
For a brighter apple flavor, reserve one tablespoon of lemon juice and stir in after chilling.
