Easy Apple Curd

A silky, cozy spread made with apples and infused with lemon and cinnamon, perfect for breakfast or dessert.

Ingredients

  • 6 apples, peeled, cored, and chopped (about 2–3 lbs depending on size)
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/2 cup unsalted butter (1 stick)
  • 4 large eggs
  • 1 teaspoon ground cinnamon

Instructions

  1. In a saucepan, combine the chopped apples, sugar, and lemon juice. Cook over medium heat for 10–15 minutes until the apples are soft and translucent.
  2. Remove from heat and blend the cooked apples until smooth.
  3. In a bowl, whisk the eggs and gradually mix them into the apple puree, then slowly stir in melted butter.
  4. Return the mixture to the saucepan and cook over low heat for 8–12 minutes until thickened.
  5. Stir in cinnamon, let cool, then transfer to a jar and refrigerate.

Notes

For a brighter apple flavor, reserve one tablespoon of lemon juice and stir in after chilling.
