- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sugar
- 1/2 cup shredded coconut
- 1/2 cup chopped pecans
- 1 cup mashed ripe mango
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, combine flour, baking soda, and salt.
- In another bowl, mix sugar, coconut, and pecans.
- Add mashed mango, oil, eggs, and vanilla to the dry ingredients, stirring until just combined.
- Pour batter into the prepared loaf pan.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for 10 minutes before transferring to a wire rack.
Notes
Use ripe mango for best flavor. Allow the loaf to cool before slicing to preserve moisture.
